2 Tb soy sauce
2 Tb lemon juice
1/4 cup oil
1 clove garlic, minced
1/4 tsp pepper
2 green onions, chopped
Once you put the steak in, don't move it. It's better when it gets a good crust on the outside, so don't move it around until you're ready to flip it. The trick, I've discovered with ALL meats is letting them sit. Fish, chicken, beef- they all keep cooking afterwards, so don't cook them ALL THE WAY in the pan, otherwise they'll be dry once it's time to eat. It took me a long time to figure this out.
Use a large, heavy skillet for even heat distribution. Don't crowd the skillet with meat. If the steaks are too close, they'll cool down the pan and end up stewing, rather than searing. Wait 'till the pan is hot and smoking before you put them in. It says to pat steaks dry with paper towels and season with salt and pepper (I didn't, because I marinated them, I'm pretty sure I just took them out and put them in). Cook 5 minutes on medium-high heat, flip and cook 3-6 minutes (depending on desired doneness) and reduce heat if pan begins to scorch. Transfer steaks to a clean plate, tent with foil and let rest for 5 minutes.
