Umm . . . Yum????

So literally for YEARS, on and off, my mother has been a bit obsessed with Chef Brad. He's all about GRAINS. So my Mom's been on another kick lately and now he has a show online. So I finally get on there and watch one. I loved it! The link is a show about RICE and what he does with it. One of the recipes is a breakfast that is just rice. Say what? It's just rice, COCONUT OIL, and agave. All natural food products. All things that are good for you. He was raving about it, how it was yummy all by itself and how brown rice and coconut oil are so good for you. I'm a oatmeal in the morning kinda gal, but I smother it in sugar. I mean a LOT of brown sugar. So I thought, I'm gonna try this out. REALLY simple, and if it's good, maybe it would work with oatmeal, or just replace my oatmeal all together! So I go to Food4Less, the only place in town that sells unrefined coconut oil and it's on sale! So the question, am I really gonna like this stuff? Should I get the biggest jar? I'd be saving $7! That's quite savings, but then if I don't that's a waste of a purchase. It was sorta spendy. So I chance it and on the way I'm thinking. Oh my gosh. It's just oil, what if it doesn't even taste coconuty! But I get it anyway, almost filled with regret as I'm approaching the counter. But I make it. And it's GOOD. Like really good. I mean it's not dessert, but it tastes way sugary and coconuty. It's good! I'm totally eating it for breakfast! So much better for me. AND I put in less agave and oil and put in some strawberries and it was sooooo good. On another show of his he talked about oats and how the oatmeal I eat has been processed a bit and has lossed some of it's nutrition, but brown rice is whole and hasn't lost anything. So that's gotta be better for me. ANYWAY. I was psyched and wanted to share! I was hoping it would be a hit. Who knew rice could be breakfast. Doesn't that just sound weird? I feel like the more I'm trying to better myself, the weirder I'm becoming.

That sounds delicious! I still have not tried coconut oil, but I hear good things about it - I think I am just too cheap/poor to do it yet.
Last week when I was in Seattle they had rice at the continental breakfast at the hotel. Mindy and I thought it was so random, but of course we Hawaiians love our rice so we both had a bowl of it!

I just read a recipe on Pinterest for Larabars that used coconut oil and wanted to try using it. I was afraid it was spendy and have yet to get the ingredients to make them. I love coconut anything so I bet it is really yummy. And rice for breakfast, who would have thought...

Okay so when he did that he used "Sweet brown rice" did you get the "sweet" brown rice? I couldn't find it ANYwhere and special ordered it. It hasn't come yet. Did you just use normal brown rice? I"m pretty pumped about this chef brad stuff too :) Love you!

Oh, I LOVE coconut oil. I buy it in big ol' jars online and do not allow myself to run out. Our normal breakfast is fruit, followed by oatmeal with a mashed banana and a load of coconut oil. Yum! And craisins and sunflower seeds. Sometimes walnuts if I've shelled any recently. BUT, whenever I have leftover brown rice from the night before, that's what I prefer over oatmeal. Just brown rice and coconut oil and I'm in heaven. I need to plan ahead and make it earlier/night before, otherwise the 45 mins for the rice to cook is a little long for the kiddos to wait, oddly enough... ;)

I love coconut oil. I don't even like coconuts. I have it on my toast a lot. And of course whatever Mom puts it in. :) I love you!
